Shrimp and Avocado Salad with Lime Dressing

Ingredients

Servings4

Yields 4 servings

  • (1 lb) shrimp, peeled and deveined
  • (2) ripe avocados, diced
  • (1 cup) cherry tomatoes, halved
  • (1/2 cups) red onion, finely chopped
  • (1/4 cups) fresh cilantro, chopped
  • (1/4 cups) lime juice
  • (2 tbsp) olive oil
  • (1 tsp) garlic powder
  • (1/2 tsp) salt
  • (1/4 tsp) black pepper
  • (1/4 tsp) cayenne pepper (optional)

Instructions

  1. 1

In a medium bowl, combine 1 lb shrimp, 1 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper.

  2. 2

Heat a skillet over medium heat and add the seasoned shrimp. Cook for 2-3 minutes on each side until pink and cooked through. Remove from heat and let cool.

  3. 3

In a large bowl, combine 2 ripe avocados (diced), 1 cup cherry tomatoes (halved), 1/2 cup red onion (finely chopped), and 1/4 cup fresh cilantro (chopped).

  4. 4

In a small bowl, whisk together 1/4 cup lime juice, 2 tbsp olive oil, and 1/4 tsp cayenne pepper (if using).

  5. 5

Add the cooked shrimp to the large bowl with the avocado mixture.

  6. 6

Pour the lime dressing over the salad and gently toss to combine all ingredients without mashing the avocados.
