Shepherd's Pie with Ground Beef and Vegetables

- (1) medium onion, diced
- (2) carrots, diced
- (2) celery stalks, diced
- (2 cloves) garlic, minced
- (1 cup) frozen peas
- (1 cup) beef broth
- (2 tbsp) tomato paste
- (1 tsp) Worcestershire sauce
- (1 tsp) dried thyme
- (1 tsp) dried rosemary
- Salt to taste
- Pepper to taste
- (4 cups) mashed potatoes (prepared)
- (1/2 cups) shredded cheddar cheese (optional)

Preheat the oven to 400°F (200 °C).

In a large skillet, cook 1 lb ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat.

Add 1 medium onion, diced, 2 carrots, diced, and 2 celery stalks, diced to the skillet. Cook for 5 minutes until vegetables are softened.

Stir in 2 cloves garlic, minced, and cook for an additional minute until fragrant.

Add 1 cup frozen peas, 1 cup beef broth, 2 tbsp tomato paste, 1 tsp Worcestershire sauce, 1 tsp dried thyme, 1 tsp dried rosemary, salt, and pepper. Mix well and simmer for 10 minutes until slightly thickened.

Spread the beef and vegetable mixture evenly in a 9x9 inch baking dish.

Top with 4 cups mashed potatoes, spreading it evenly over the beef mixture. Use a fork to create texture on the surface.

If desired, sprinkle 1/2 cup shredded cheddar cheese on top of the mashed potatoes.

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbling.
