  • (4) salmon fillets
  • (2) zucchini, sliced
  • (2) bell pepper, chopped
  • (2 cups) cherry tomatoes, halved
  • (2) red onion, sliced into wedges
  • (4 tbsp) olive oil
  • (4) lemons, juiced and zested
  • (4 tsp) dried oregano
  • (4 tsp) fresh parsley, chopped
  • (1 tsp) salt
  • (1/2 tsp) black pepper

    Preheat your oven to 400°F (200 °C).

    On a large sheet pan, arrange the (4) salmon fillets towards the center.

    In a large bowl, combine the (2) zucchini, (2) bell pepper, (2) cup of cherry tomatoes, and (2) red onion. Drizzle with (4 tbsp) olive oil, (1 tsp) salt, and (1/2 tsp) black pepper. Toss to coat evenly and spread around the salmon on the pan.

    In a small bowl, mix together the juice and zest of (4) lemons, (4 tsp) dried oregano, and (4 tsp) fresh parsley. Pour this mixture over the salmon fillets.
