Sheet Pan Lemon Herb Salmon with Seasonal Vegetables

Ingredients

- (4) salmon fillets
- (2) zucchini, sliced
- (2) bell pepper, chopped
- (2 cups) cherry tomatoes, halved
- (2) red onion, sliced into wedges
- (4 tbsp) olive oil
- (4) lemons, juiced and zested
- (4 tsp) dried oregano
- (4 tsp) fresh parsley, chopped
- (1 tsp) salt
- (1/2 tsp) black pepper

Preheat your oven to 400°F (200 °C).

On a large sheet pan, arrange the (4) salmon fillets towards the center.

In a large bowl, combine the (2) zucchini, (2) bell pepper, (2) cup of cherry tomatoes, and (2) red onion. Drizzle with (4 tbsp) olive oil, (1 tsp) salt, and (1/2 tsp) black pepper. Toss to coat evenly and spread around the salmon on the pan.

In a small bowl, mix together the juice and zest of (4) lemons, (4 tsp) dried oregano, and (4 tsp) fresh parsley. Pour this mixture over the salmon fillets.

Bake in the preheated oven for about 25-30 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
