Sheet Pan Lemon Herb Salmon and Asparagus

Ingredients

- (4) salmon fillets
- (1 lb) asparagus, trimmed
- (2) lemons, one zested and juiced, one sliced
- (4 tbsp) olive oil
- (2 tsp) dried oregano
- (2 tsp) dried thyme
- (2) garlic cloves, minced
- (1 tsp) salt
- (1/2 tsp) black pepper

Preheat the oven to 400°F (200 °C).

On a large sheet pan, lay out the (4) salmon fillets and (1 lb) trimmed asparagus.

In a small bowl, mix together (4 tbsp) olive oil, the zest of (1) lemon, the juice of (1) lemon, (2 tsp) dried oregano, (2 tsp) dried thyme, (2 cloves) minced garlic, (1 tsp) salt, and (1/2 tsp) black pepper.

Drizzle the lemon herb mixture over the salmon fillets and asparagus, ensuring everything is well coated.

Arrange the lemon slices from (1) lemon over the top of the salmon.

Roast in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
