Savory Sweet Potato and Kale Hash

Ingredients

- (2) medium sweet potatoes, peeled and diced
- (1) small red onion, diced
- (2 cloves) garlic, minced
- (4 cups) kale, chopped, stems removed
- (1) red bell pepper, diced
- (2 tbsp) olive oil
- (1 tsp) smoked paprika
- (1/2 tsp) ground cumin
- (1/4 tsp) black pepper
- (1/4 tsp) salt
- (4) large eggs
- (1/4 cups) feta cheese, crumbled (optional)

Heat (2 tbsp) olive oil in a large skillet over medium heat.

Add the (1) small red onion and sauté for about 3-4 minutes until translucent.

Stir in the (2) cloves garlic and cook for another minute until fragrant.

Add the (2) medium sweet potatoes to the skillet, followed by (1 tsp) smoked paprika, (1/2 tsp) ground cumin, (1/4 tsp) black pepper, and (1/4 tsp) salt. Stir well to combine.

Cover the skillet and cook for about 15 minutes, stirring occasionally, until the sweet potatoes are tender.

Add the (1) red bell pepper and (4 cups) chopped kale to the skillet. Cook for an additional 5-7 minutes, until the kale is wilted and tender.

Make 4 small wells in the hash and crack (4) large eggs into the wells.

Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.

If using, sprinkle (1/4 cup) crumbled feta cheese over the top before serving.
