Savory Spring Chicken and Asparagus Stir-Fry

Ingredients
Yields 4 servings
- (1 lb) chicken breast, sliced into thin strips
- (1 lb) asparagus, trimmed and cut into 2-inch pieces
- (1) bell pepper, sliced
- (1) medium onion, sliced
- (3 cloves) garlic, minced
- (1/4 cups) soy sauce
- (2 tbsp) olive oil
- (1 tbsp) sesame oil
- (1 tbsp) honey
- (1 tsp) ginger, minced
- (1/2 tsp) black pepper
- (1/4 tsp) red pepper flakes (optional)
- (2 cups) cooked rice (for serving)

In a small bowl, mix together 1/4 cup soy sauce, 1 tbsp honey, 1 tsp minced ginger, and 1/2 tsp black pepper. Set aside.

Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat.

Add the sliced chicken breast (1 lb) to the skillet and stir-fry for about 5-7 minutes, until cooked through and lightly browned. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tbsp olive oil, sliced onion (1 medium) and bell pepper (1). Stir-fry for 3-4 minutes until they start to soften.

Add the trimmed asparagus (1 lb) and minced garlic (3 cloves) to the skillet. Stir-fry for another 3-4 minutes until the asparagus is bright green and tender-crisp.

Return the cooked chicken to the skillet and pour in the prepared sauce. Stir everything together and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

If desired, sprinkle in 1/4 tsp red pepper flakes for a bit of heat and mix well.

Serve the stir-fry over cooked rice (2 cups) and drizzle with 1 tbsp sesame oil before serving.
