Savory Spinach and Feta Stuffed Chicken Breasts

- 2 cupsfresh spinach, chopped
- 1 cupfeta cheese, crumbled
- 1/4 cupcream cheese, softened
- 2 clovesgarlic, minced
- 1 tablespoonolive oil
- 1/2 teaspoondried oregano
- 1/2 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1/2 cupchicken broth

Preheat your oven to 375°F (190°C).

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the chopped spinach to the skillet. Cook until wilted, about 2-3 minutes, then remove from heat and let cool slightly.

In a mixing bowl, combine the cooked spinach mixture with the crumbled feta cheese, softened cream cheese, dried oregano, salt, and black pepper. Mix until well combined.

Using a sharp knife, create a pocket in each chicken breast. Be careful not to cut all the way through.

Stuff each chicken breast pocket with the spinach and feta mixture, using toothpicks to secure the opening if necessary.

Place the stuffed chicken breasts in a baking dish. Pour the chicken broth around the chicken in the dish.

Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and juices run clear.
