Savory Spinach and Feta Muffins

Ingredients
Yields 12 muffins
- (2 cups) all-purpose flour
- (1 tablespoon) baking powder
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1/2 teaspoons) garlic powder
- (1 cup) fresh spinach, chopped
- (1 cup) feta cheese, crumbled
- (3/4 cups) milk
- (1/2 cups) olive oil
- (2) large eggs
- (1/4 cups) grated Parmesan cheese

Preheat the oven to 375°F (190 °C) and line a muffin tin with paper liners or grease with cooking spray.

In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of garlic powder. Mix well.

Add 1 cup of chopped fresh spinach and 1 cup of crumbled feta cheese to the dry ingredients, and stir until evenly distributed.

In another bowl, whisk together 3/4 cup of milk, 1/2 cup of olive oil, and 2 large eggs until well combined.

Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Sprinkle 1/4 cup of grated Parmesan cheese on top of each muffin.

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
