  • (1) pre-made pie crust
  • (1 tablespoon) olive oil
  • (1) small onion, diced
  • (2 cups) fresh spinach, chopped
  • (4) large eggs
  • (1 cup) milk
  • (1 cup) feta cheese, crumbled
  • (1/2 teaspoons) salt
  • (1/4 teaspoons) black pepper
  • (1/4 teaspoons) nutmeg

    Preheat the oven to 375°F (190 °C).

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 small diced onion and sauté until translucent, about 5 minutes.

    Add 2 cups of chopped fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
