Ingredients

- (2) chicken breasts, diced
- (1 cup) quinoa, rinsed
- (2 cups) low-sodium chicken broth
- (1) medium onion, chopped
- (2 cloves) garlic, minced
- (1) bell pepper, diced
- (1) zucchini, diced
- (1 tsp) paprika
- (1 tsp) dried oregano
- (1 tbsp) olive oil
- (1/2 tsp) black pepper
- (1/2 tsp) salt
- (2 tbsp) fresh parsley, chopped (for garnish)

In a large skillet, heat (1 tbsp) olive oil over medium heat.

Add the (2) diced chicken breasts to the skillet and season with (1 /2) tsp salt, (1 /2) tsp black pepper, (1) tsp paprika, and (1) tsp dried oregano. Cook until the chicken is browned on all sides, about 5-7 minutes.

Add the (1) chopped onion and (2) minced garlic to the pan. Sauté for 2-3 minutes until the onion turns translucent.

Stir in the (1) diced bell pepper and (1) diced zucchini. Cook for another 4-5 minutes until the vegetables are tender.

Add the (1) cup quinoa and (2) cups chicken broth to the skillet. Stir to combine all ingredients.
