Savory One-Pan Chicken and Broccoli Rice Bake

- (2) chicken breasts, cubed
- (1 cup) uncooked white rice
- (2 cups) chicken broth
- (2 cups) fresh broccoli florets
- (1 cup) shredded cheddar cheese
- (1) small onion, diced
- (2 cloves) garlic, minced
- (1/2 tsp) black pepper
- (1 tsp) garlic powder
- (1 tsp) paprika
- (1 tbsp) olive oil
- (1/2 tsp) salt

Preheat your oven to 375°F (190 °C).

In a large oven-safe skillet, heat (1 tbsp) olive oil over medium heat. Add (1 small) diced onion and sauté for about 2 minutes until translucent.

Add (2 cloves) minced garlic to the skillet and cook for an additional minute until fragrant.

Stir in the (2) cubed chicken breasts and season with (1/2 tsp) salt, (1 tsp) garlic powder, (1 tsp) paprika, and (1/2 tsp) black pepper. Cook until the chicken is lightly browned, about 5-6 minutes.

Add (1 cup) uncooked white rice to the skillet, followed by (2 cups) chicken broth. Bring to a simmer.

Once it starts simmering, stir in (2 cups) fresh broccoli florets and remove from heat.

Sprinkle (1 cup) shredded cheddar cheese evenly over the top.

Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 25-30 minutes, or until the rice is tender and the liquid has been absorbed.
