Ingredients

- (2 cups) rolled oats
- (4 cups) water
- (1 teaspoon) salt
- (4) large eggs
- (2) ripe avocados
- (1 tablespoon) olive oil
- (1 teaspoon) black pepper
- (1 teaspoon) smoked paprika
- (1/2 cups) chopped green onions
- (1/4 cups) crumbled feta cheese

In a medium saucepan, bring 4 cups of water to a boil.

Add 2 cups of rolled oats and 1 teaspoon of salt to the boiling water. Stir well and reduce heat to low.

Simmer the oats for about 5-7 minutes, stirring occasionally, until creamy.

While the oats are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat.

Crack 4 large eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, or scrambled). Season with 1 teaspoon of black pepper and 1 teaspoon of smoked paprika.
