Savory Mushroom and Spinach Stuffed Chicken Breast

- (2 tbsp) olive oil
- (4 cloves) garlic, minced
- (2 cups) mushrooms, finely chopped
- (4 cups) fresh spinach, chopped
- (1 cup) cream cheese, softened
- (1/2 cups) grated Parmesan cheese
- (1 tsp) salt
- (1/2 tsp) black pepper
- (1 tsp) dried thyme
- (1/2 cups) breadcrumbs

Preheat the oven to 375°F (190 °C).

In a large skillet, heat (2 tbsp) olive oil over medium heat.

Add (4 cloves) minced garlic and sauté for about 30 seconds until fragrant.

Stir in (2 cup) finely chopped mushrooms and cook until they release moisture and become tender, about 5 minutes.

Add (4 cups) chopped spinach to the skillet and cook until wilted, about 2 minutes.

Remove the skillet from heat and let the mixture cool for a few minutes.

In a bowl, combine the cooled mushroom and spinach mixture with (1 cup) softened cream cheese, (1/2 cup) grated Parmesan cheese, (1 tsp) salt, (1/2 tsp) black pepper, and (1 tsp) dried thyme. Mix well until combined.

Using a sharp knife, create a pocket in each chicken breast by slicing each one horizontally, being careful not to cut all the way through.

Stuff each chicken breast with the mushroom and spinach mixture, using toothpicks to secure the openings if necessary.

Place the stuffed chicken breasts in a baking dish and sprinkle (1/2 cup) breadcrumbs evenly on top.
