Savory Italian One-Pot Pasta with Spinach and Tomatoes

Ingredients
Yields 4 servings
- (8 oz) penne pasta
- (2 tbsp) olive oil
- (3 cloves) garlic, minced
- (1/2) onion, diced
- (14 oz) diced tomatoes, canned
- (2 cups) vegetable broth
- (1 tsp) Italian seasoning
- (2 cups) fresh spinach, chopped
- (1/2 cups) grated Parmesan cheese
- (salt and pepper, to taste)

In a large pot, heat (2 tbsp) olive oil over medium heat. Add (1/2) onion and sauté until translucent, about 3-4 minutes.

Add the (3 cloves) garlic and sauté for an additional minute until fragrant.

Stir in (14 oz) diced tomatoes, (8 oz) penne pasta, (2 cups) vegetable broth, (1 tsp) Italian seasoning,. Bring to a boil.

Reduce the heat to a simmer, cover the pot, and cook for about 15-20 minutes or until the pasta is al dente and has absorbed most of the liquid. Stir occasionally to prevent sticking.

Once the pasta is cooked, stir in (2 cups) fresh spinach and cook for an additional 2-3 minutes until the spinach wilts.

Remove from heat and mix in (1/2 cup) grated Parmesan cheese. Season with salt and pepper to taste before serving.
