Savory Herb and Garlic Pork Tenderloin

- (1 1/2 lbs) pork tenderloin
- (4 cloves) garlic, minced
- (2 tbsp) olive oil
- (2 tsp) dried rosemary
- (2 tsp) dried thyme
- (1 tsp) salt
- (1/2 tsp) black pepper
- (2 tbsp) balsamic vinegar
- (1 tbsp) Dijon mustard
- (1/4 cups) fresh parsley, chopped

Preheat the oven to 400°F (200 °C).

In a small bowl, combine the (4 cloves) minced garlic, (2 tbsp) olive oil, (2 tsp) dried rosemary, (2 tsp) dried thyme, (1 tsp) salt, (1/2 tsp) black pepper, and to create a marinade.

Place the (1 1/2 lbs) pork tenderloin in a shallow dish and pour the marinade over it, making sure to coat the meat evenly. Cover and let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

After marinating, remove the pork from the marinade and place it on a baking sheet lined with parchment paper.

In a small bowl, mix the (2 tbsp) balsamic vinegar and (1 tbsp) Dijon mustard, then brush this mixture over the pork tenderloin.

Roast the pork tenderloin in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 145°F (63 °C).

Once cooked, remove the pork from the oven and let it rest for 5-10 minutes before slicing.

Slice the pork tenderloin and garnish with (1/4 cup) chopped fresh parsley before serving.
