Savory Chicken Cacciatore

Ingredients
Yields 4 servings
- (4) chicken thighs, bone-in and skin-on
- (1) large onion, chopped
- (2 cloves) garlic, minced
- (1) red bell pepper, sliced
- (1) green bell pepper, sliced
- (1 can) (14.5 oz) diced tomatoes
- (1/2 cups) chicken broth
- (1 tbsp) olive oil
- (1 tsp) dried oregano
- (1 tsp) dried basil
- (1/2 tsp) red pepper flakes
- (1/4 tsp) black pepper
- (1/4 tsp) salt
- (1/4 cups) fresh parsley, chopped

Heat (1 tbsp) olive oil in a large skillet over medium heat.

Add the (4) chicken thighs, skin-side down, and sear until golden brown for about 5-7 minutes. Flip and cook for another 5 minutes. Remove from the pan and set aside.

In the same skillet, add (1) large onion and sauté until softened, about 3-4 minutes.

Stir in (2) cloves garlic and cook until fragrant, about 1 minute.

Add (1) red bell pepper and (1) green bell pepper to the skillet, cooking for another 5 minutes until softened.

Pour in (1 can) diced tomatoes and (1/2 cup) chicken broth, then stir in (1 tsp) dried oregano, (1 tsp) dried basil, (1/2 tsp) red pepper flakes, (1/4 tsp) black pepper, and (1/4 tsp) salt.

Return the chicken thighs to the skillet, skin-side up, and bring the mixture to a gentle simmer.

Cover the skillet and let it cook for about 25-30 minutes, or until the chicken is cooked through and tender.
