Savory Chicken and Rice Casserole

- (1 cup) long-grain white rice
- (2 cups) chicken broth
- (1 cup) broccoli florets
- (1 cup) sliced mushrooms
- (1) medium onion, chopped
- (2 cloves) garlic, minced
- (1 tsp) dried thyme
- (1 tsp) paprika
- (1/2 tsp) black pepper
- (1/2 tsp) salt
- (1 cup) shredded cheddar cheese

Preheat the oven to 375°F (190 °C).

In a large skillet, heat 2 tbsp olive oil over medium heat. Add 1 medium onion, chopped, and sauté until translucent, about 3-4 minutes.

Add 2 cloves garlic, minced, and cook for another minute until fragrant.

Stir in 1 lb chicken breast, diced, and cook until browned on all sides, about 5-7 minutes.

Add 1 cup long-grain white rice, 2 cups chicken broth, 1 tsp dried thyme, 1 tsp paprika, 1/2 tsp black pepper, and 1/2 tsp salt to the skillet. Mix well and bring to a boil.

Once boiling, reduce the heat to low, cover, and simmer for 10 minutes.

After 10 minutes, stir in 1 cup broccoli florets and 1 cup sliced mushrooms. Mix well and remove from heat.

Transfer the mixture to a greased 9x13 inch baking dish and spread evenly.

Sprinkle 1 cup shredded cheddar cheese on top of the casserole.

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
