  • (1/4 cups) milk
  • (1/2 tsp) salt
  • (1/4 tsp) black pepper
  • (2 tbsp) butter
  • (8) small corn tortillas
  • (1 cup) diced tomatoes
  • (1/2 cups) diced onion
  • (1/2 cups) chopped cilantro
  • (1) jalapeño, finely chopped
  • (1/2 tsp) lime juice

Instructions

    In a bowl, whisk together the (8) eggs, (1/4 cup) milk, (1/2 tsp) salt, and (1/4 tsp) black pepper until well combined.

    In a non-stick skillet, melt (2 tbsp) butter over medium heat. Pour in the egg mixture and stir gently until the eggs are softly scrambled and cooked through, about 5-7 minutes. Remove from heat.
