- (8) small corn tortillas
- (1 cup) diced tomatoes
- (1/2 cups) diced onion
- (1/2 cups) chopped cilantro
- (1) jalapeño, finely chopped
- (1/2 tsp) lime juice

In a bowl, whisk together the (8) eggs, (1/4 cup) milk, (1/2 tsp) salt, and (1/4 tsp) black pepper until well combined.

In a non-stick skillet, melt (2 tbsp) butter over medium heat. Pour in the egg mixture and stir gently until the eggs are softly scrambled and cooked through, about 5-7 minutes. Remove from heat.

In another bowl, combine (1 cup) diced tomatoes, (1/2 cup) diced onion, (1/2 cup) chopped cilantro, (1) finely chopped jalapeño, and (1/2 tsp) lime juice to make the salsa.
