- (4) large eggs
- (1) ripe avocado
- (1/2 cups) shredded cheese
- (1/2 cups) diced tomatoes
- (1/2 cups) chopped onion
- (1 tablespoon) olive oil
- (1/2 teaspoons) ground cumin
- (1/2 teaspoons) paprika
- (1/2 teaspoons) black pepper
- (1/4 teaspoons) salt
- (1/4 cups) fresh cilantro, chopped
- (1) lime, cut into wedges

In a medium bowl, crack the (4) large eggs and whisk them together with (1 /2) teaspoon ground cumin, (1 /2) teaspoon paprika, (1 /4) teaspoon black pepper, and (1 /4) teaspoon salt.

In a large skillet, heat (1 tablespoon) olive oil over medium heat. Pour in the egg mixture and scramble until fully cooked, about 3-4 minutes. Remove from heat and set aside.

In the same skillet, lightly toast the (8) small corn tortillas for about 1 minute per side until warm and pliable.

Slice the (1) ripe avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice it into thin pieces.

To assemble the tacos, place a generous portion of scrambled eggs on each tortilla. Top with (1 /4) cup diced tomatoes, (1 /4) cup chopped onion, and slices of avocado.
