In a skillet over medium heat, melt (1 tbsp) butter. Add (1 cup) fresh spinach and sauté until wilted, about 2-3 minutes.

Pour the egg mixture into the skillet with the wilted spinach. Cook, gently stirring, until eggs are just set, about 4-5 minutes.
