  • (4 cups) water
  • (1 tsp) salt
  • (1 tbsp) olive oil
  • (1) medium onion, chopped
  • (2 cloves) garlic, minced
  • (1) red bell pepper, diced
  • (1 cup) spinach, chopped
  • (4) large eggs
  • (1 cup) shredded cheese (such as cheddar or mozzarella)
  • (1/4 cups) fresh herbs (like parsley or chives), chopped
  • (1/2 tsp) black pepper

Instructions

    In a medium saucepan, bring (4) cups of water to a boil. Add (1) tsp salt and gradually whisk in (1) cup polenta, stirring constantly to prevent lumps.

    Reduce the heat to low, cover, and cook for about 30 minutes, stirring occasionally until the polenta is thick and creamy. Stir in (1 tbsp) olive oil and (1 /4) tsp black pepper. Set aside.

    In a skillet over medium heat, add (1) tbsp olive oil. Once hot, add (1) medium onion, chopped, and sauté for about 5 minutes until translucent.
