  • (2 cups) diced potatoes
  • (1 cup) diced bell peppers
  • (1 cup) diced onions
  • (1 cup) chopped spinach
  • (4) large eggs
  • (2 tablespoons) olive oil
  • (1 teaspoon) garlic powder
  • (1 teaspoon) paprika
  • (1/2 teaspoons) salt
  • (1/4 teaspoons) black pepper
  • (1/4 teaspoons) red pepper flakes (optional)

Instructions

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Add 2 cups of diced potatoes to the skillet and cook for about 10 minutes, stirring occasionally, until they begin to soften.

    Stir in 1 cup of diced bell peppers and 1 cup of diced onions. Cook for an additional 5-7 minutes until the vegetables are tender.

    Add 1 cup of chopped spinach, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of red pepper flakes (if using). Stir to combine and cook for another 3 minutes until the spinach wilts.
