Savory Breakfast Fried Rice

Ingredients
Yields 4 servings
- (2 cups) cooked jasmine rice
- (4) large eggs
- (1 cup) mixed vegetables (such as peas, carrots, and corn)
- (2 tbsp) soy sauce
- (2 tbsp) vegetable oil
- (2) green onions, chopped
- (2 cloves) garlic, minced
- (1/2 tsp) sesame oil
- (1/4 tsp) ground black pepper
- (1/4 tsp) salt

In a large pan or wok, heat (2 tbsp) vegetable oil over medium-high heat.

Add the (2 cloves) garlic and sauté for about 30 seconds until fragrant.

Push the garlic to the side and add the (2 cups) cooked jasmine rice to the pan, breaking up any clumps with a spatula.

Stir in the (1 cup) mixed vegetables and cook for about 3-4 minutes until heated through.

In a bowl, beat the (4) large eggs and season with (1/4 tsp) salt and (1/4 tsp) ground black pepper.

Create a well in the center of the rice mixture and pour in the beaten eggs, scrambling them until fully cooked.

Once the eggs are cooked, stir everything together in the pan, mixing well.

Add the (2 tbsp) soy sauce and (1/2 tsp) sesame oil, mixing until the rice is evenly coated and heated through.
