Savory Breakfast Brioche Sandwiches

Ingredients
Yields 1 loaf
- (4) brioche buns
- (4) large eggs
- (1 cup) shredded cheddar cheese
- (1/2 cups) cooked bacon, chopped
- (1/2 cups) fresh spinach
- (2 tablespoons) butter
- Salt to taste
- Pepper to taste

Preheat your oven to 350°F (175 °C).

In a skillet, melt 2 tablespoons of butter over medium heat.

Crack 4 large eggs into the skillet and season with salt and pepper to taste. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.

While the eggs are cooking, slice the brioche buns in half and place them on a baking sheet, cut side up.

Sprinkle 1 cup of shredded cheddar cheese evenly on the bottom halves of the brioche buns.

Add 1/2 cup of chopped cooked bacon and 1/2 cup of fresh spinach on top of the cheese.

Once the eggs are done, carefully place one egg on each sandwich, over the bacon and spinach.

Top each sandwich with the other half of the brioche bun.

Bake in the preheated oven for 10-12 minutes, until the cheese is melted and the buns are golden brown.

Remove from the oven, let cool slightly, and serve warm.
