  • (1 lb) ground chicken
  • (1 tbsp) vegetable oil
  • (1/2 cups) diced onion
  • (2 cloves) garlic, minced
  • (1/2 cups) diced bell pepper
  • (1/2 cups) grated carrots
  • (1/4 cups) soy sauce
  • (1 tbsp) hoisin sauce
  • (1 tbsp) rice vinegar
  • (1 tsp) sesame oil
  • (1/4 tsp) black pepper
  • (1) head butter lettuce, leaves separated
  • (1/4 cups) chopped green onions
  • (1/4 cups) chopped cilantro
  • (1/4 cups) chopped peanuts (optional)

Instructions

    In a large skillet, heat 1 tbsp vegetable oil over medium heat.

    Add 1 lb ground chicken and cook until browned, about 5-7 minutes, breaking it apart with a spatula.

    Stir in 1/2 cup diced onion and cook until softened, about 3 minutes.

    Add 2 cloves minced garlic and 1/2 cup diced bell pepper, cooking for an additional 2 minutes.

    Stir in 1/2 cup grated carrots, 1/4 cup soy sauce, 1 tbsp hoisin sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, and 1/4 tsp black pepper. Cook for another 3-5 minutes until heated through.

    Remove from heat and stir in 1/4 cup chopped green onions and 1/4 cup chopped cilantro.
