Sautéed Zucchini and Onions

Ingredients
Yields 4 servings
- (2) medium zucchinis
- (1) large onion
- (2 tablespoons) olive oil
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1/2 teaspoons) garlic powder
- (1 tablespoon) fresh parsley (optional)
Instructions

Slice the 2 medium zucchinis into half-moon shapes, about 1/4 inch thick.

Peel and slice the 1 large onion into thin strips.

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add the sliced onions to the skillet and sauté for 3-4 minutes until they begin to soften.

Add the sliced zucchinis to the skillet with the onions.

Season with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of garlic powder. Add 1 teaspoon salt, 2/4 teaspoon black pepper, and 2/4 teaspoon garlic powder.

Continue to sauté for another 5-7 minutes, stirring occasionally, until the zucchinis are tender and slightly golden.

Remove from heat and sprinkle with 1 tablespoon of chopped fresh parsley, if desired.
