Roasted Lemon Garlic Green Beans

Ingredients

- (1 lb) green beans, trimmed
- (3 tbsp) olive oil
- (4 cloves) garlic, minced
- (1) lemon, zested and juiced
- (1 tsp) salt
- (1/2 tsp) black pepper
- (1/4 tsp) red pepper flakes (optional)
- (2 tbsp) grated Parmesan cheese (optional)

Preheat the oven to 425°F (220 °C).

In a large bowl, combine 1 lb green beans, 3 tbsp olive oil, 4 cloves garlic (minced), 1 tsp salt, 1/2 tsp black pepper, and 1/4 tsp red pepper flakes (if using). Add 2/4 tsp black pepper and 1/4 tsp red pepper flakes (optional).

Add the zest and juice of 1 lemon to the bowl and toss everything together until the green beans are well coated.

Spread the green beans in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the beans are tender and slightly crispy.

Remove from the oven and, if desired, sprinkle with 2 tbsp grated Parmesan cheese before serving.
