Roasted Garlic Parmesan Potatoes

- (2 pounds) baby potatoes
- (1/4 cups) olive oil
- (1 tablespoon) garlic powder
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1/2 cups) grated Parmesan cheese
- (2 tablespoons) fresh parsley, chopped

Preheat the oven to 425°F (220 °C).

Wash and halve 2 pounds baby potatoes, then place them in a large mixing bowl.

Add 1/4 cup olive oil, 1 tablespoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper to the potatoes. Toss until evenly coated.

Spread the potatoes in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 30 minutes, turning halfway through for even cooking.

After 30 minutes, remove the potatoes from the oven and sprinkle 1/2 cup grated Parmesan cheese over them.

Return the potatoes to the oven and roast for an additional 10-15 minutes, or until they are golden brown and crispy.
