Roast Turkey

Ingredients
Yields 4 servings
- (1) (4-5 lb) whole turkey, thawed
- (1/4 cups) olive oil
- (2 tablespoons) salt
- (1 tablespoon) black pepper
- (1 tablespoon) garlic powder
- (1 tablespoon) onion powder
- (1 tablespoon) dried thyme
- (1 tablespoon) dried rosemary
- (1) lemon, halved
- (1) onion, quartered
- (4 cups) chicken broth

Preheat the oven to 375°F (190 °C).

Rinse the turkey under cold water and pat it dry with paper towels.

In a small bowl, mix together 1/4 cup olive oil, 2 tablespoons salt, 1 tablespoon black pepper, 1 tablespoon garlic powder, 1 tablespoon onion powder, 1 tablespoon dried thyme, and 1 tablespoon dried rosemary to create a seasoning rub.

Rub the seasoning mixture all over the turkey, including under the skin where possible.

Stuff the cavity of the turkey with the halved lemon and quartered onion.

Place the turkey breast-side up on a roasting rack in a roasting pan.

Pour 4 cups of chicken broth into the bottom of the roasting pan to keep the turkey moist during cooking.

Roast the turkey in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75 °C) when measured at the thickest part of the thigh.

Baste the turkey with the pan juices every 30 minutes for added flavor and moisture.

Once done, remove the turkey from the oven and let it rest for 20 minutes before carving.
