Servings4

Yields 4 servings

  • (1 cup) uncooked white rice
  • (2 cups) whole milk
  • (1 cup) water
  • (1/2 cups) granulated sugar
  • (1/4 teaspoons) salt
  • (1 teaspoon) vanilla extract
  • (1/2 teaspoons) ground cinnamon
  • (1/4 cups) raisins (optional)
  • (1 tablespoon) butter

Instructions

  1. 1

In a medium saucepan, combine 1 cup uncooked white rice, 2 cups whole milk, and 1 cup water. Bring to a boil over medium heat.

  2. 2

Once boiling, reduce the heat to low, cover, and simmer for 20 minutes, stirring occasionally.

  3. 3

After 20 minutes, add 1/2 cup granulated sugar, 1/4 teaspoon salt, 1 teaspoon vanilla extract, and 1/2 teaspoon ground cinnamon. Stir well to combine.

  4. 4

If using, add 1/4 cup raisins and stir them into the mixture.

  5. 5

Continue to cook uncovered over low heat for an additional 15-20 minutes, stirring frequently, until the pudding thickens to your desired consistency.

  6. 6

Remove from heat and stir in 1 tablespoon butter until melted and well combined.

  7. 7

Let the rice pudding cool slightly before serving. It can be enjoyed warm or chilled.
