Red Lentil Curry

Ingredients
Yields 4 servings
- (1 cup) red lentils
- (1) medium onion, chopped
- (2 cloves) garlic, minced
- (1 tablespoon) ginger, grated
- (1 tablespoon) curry powder
- (1 teaspoon) cumin
- (1/2 teaspoons) turmeric
- (1 can) (14 oz) coconut milk
- (2 cups) vegetable broth
- (1 tablespoon) vegetable oil
- (1) medium tomato, chopped
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1 cup) spinach, chopped
- (1 tablespoon) fresh cilantro, chopped (for garnish)

In a large pot, heat 1 tablespoon vegetable oil over medium heat.

Add 1 medium onion, chopped, and sauté for 5 minutes until translucent.

Stir in 2 cloves garlic, minced, and 1 tablespoon ginger, grated, and cook for another 1-2 minutes until fragrant.

Add 1 tablespoon curry powder, 1 teaspoon cumin, and 1/2 teaspoon turmeric, stirring to coat the onions and garlic in the spices.

Pour in 1 can (14 oz) coconut milk and 2 cups vegetable broth, stirring to combine.

Add 1 cup red lentils, 1 medium tomato, chopped, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the pot. Bring to a boil, then reduce heat to low.

Cover and simmer for 30-35 minutes, stirring occasionally, until the lentils are tender.

Stir in 1 cup spinach, chopped, and cook for an additional 5 minutes until the spinach is wilted.
