  • (1 cup) red lentils
  • (1) medium onion, chopped
  • (2 cloves) garlic, minced
  • (1 tablespoon) ginger, grated
  • (1 tablespoon) curry powder
  • (1 teaspoon) cumin
  • (1/2 teaspoons) turmeric
  • (1 can) (14 oz) coconut milk
  • (2 cups) vegetable broth
  • (1 tablespoon) vegetable oil
  • (1) medium tomato, chopped
  • (1/2 teaspoons) salt
  • (1/4 teaspoons) black pepper
  • (1 cup) spinach, chopped
  • (1 tablespoon) fresh cilantro, chopped (for garnish)

Instructions

    In a large pot, heat 1 tablespoon vegetable oil over medium heat.

    Add 1 medium onion, chopped, and sauté for 5 minutes until translucent.

    Stir in 2 cloves garlic, minced, and 1 tablespoon ginger, grated, and cook for another 1-2 minutes until fragrant.

    Add 1 tablespoon curry powder, 1 teaspoon cumin, and 1/2 teaspoon turmeric, stirring to coat the onions and garlic in the spices.

    Pour in 1 can (14 oz) coconut milk and 2 cups vegetable broth, stirring to combine.

    Add 1 cup red lentils, 1 medium tomato, chopped, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the pot. Bring to a boil, then reduce heat to low.
