Quinoa Salad

Ingredients
Yields 4 servings
- (1 cup) quinoa
- (2 cups) water
- (1 cup) cherry tomatoes, halved
- (1) cucumber, diced
- (1) bell pepper, diced
- (1/2) red onion, finely chopped
- (1/4 cups) fresh parsley, chopped
- (1/4 cups) olive oil
- (2 tablespoons) lemon juice
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1/4 teaspoons) garlic powder

Rinse 1 cup quinoa under cold water in a fine mesh strainer.

In a medium saucepan, combine the rinsed quinoa and 2 cups water. Bring to a boil over medium heat.

Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let cool.

In a large bowl, combine 1 cup halved cherry tomatoes, 1 diced cucumber, 1 diced bell pepper, 1/2 finely chopped red onion, and 1/4 cup chopped fresh parsley.

In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 teaspoon garlic powder to make the dressing.

Add the cooled quinoa to the vegetable mixture and pour the dressing over it. Toss to combine until everything is well coated.
