Quick Garlic Butter Shrimp Tacos

Ingredients
Yields 4 servings
- (1 lb) large shrimp, peeled and deveined
- (3 tbsp) unsalted butter
- (4 cloves) garlic, minced
- (1/2 tsp) smoked paprika
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (8) small corn tortillas
- (1 cup) shredded cabbage
- (1/2 cups) diced tomatoes
- (1/4 cups) chopped cilantro
- (1) lime, cut into wedges

In a large skillet, melt the (3 tbsp) unsalted butter over medium heat.

Add the (4 cloves) minced garlic and sauté for about 1 minute until fragrant.

Stir in the (1 lb) shrimp, (1/2 tsp) smoked paprika, (1/2 tsp) salt, and (1/4 tsp) black pepper.

Cook the shrimp for about 3-4 minutes until they turn pink and opaque, stirring occasionally.

While the shrimp cooks, warm the (8) corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.

Once the shrimp is cooked, remove the skillet from heat.

To assemble the tacos, place a handful of (1 cup) shredded cabbage on each tortilla, followed by the garlic butter shrimp mixture.

Top with (1/2 cup) diced tomatoes and (1/4 cup) chopped cilantro.
