- (8 oz) pasta of choice
- (2 tbsp) olive oil
- (3 cloves) garlic, minced
- (6 oz) fresh spinach
- (1/2 cups) ricotta cheese
- (1/4 cups) grated Parmesan cheese
- (1/4 tsp) red pepper flakes
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) reserved pasta water
- (2 tbsp) fresh parsley, chopped for garnish

Bring a large pot of salted water to a boil and cook the (8 oz) pasta according to package instructions until al dente. Reserve (1/4 cup) of the pasta water before draining the pasta.

In a large skillet over medium heat, add (2 tbsp) olive oil and (3 cloves) minced garlic. Sauté for about 1 minute until the garlic is fragrant.

Add (6 oz) fresh spinach to the skillet and cook for 2-3 minutes, stirring frequently, until the spinach is wilted.

Lower the heat and mix in (1/2 cup) ricotta cheese and (1/4 cup) grated Parmesan cheese, stirring until creamy and well combined.

Season the mixture with (1/4 tsp) red pepper flakes, (1/2 tsp) salt, and (1/4 tsp) black pepper. Stir in the reserved pasta water to reach your desired sauce consistency.

Combine the cooked pasta with the creamy spinach and ricotta sauce in the skillet. Toss everything together until the pasta is fully coated.
