  • (8 oz) pasta of choice
  • (2 tbsp) olive oil
  • (3 cloves) garlic, minced
  • (6 oz) fresh spinach
  • (1/2 cups) ricotta cheese
  • (1/4 cups) grated Parmesan cheese
  • (1/4 tsp) red pepper flakes
  • (1/2 tsp) salt
  • (1/4 tsp) black pepper
  • (1/4 cups) reserved pasta water
  • (2 tbsp) fresh parsley, chopped for garnish

Instructions

    Bring a large pot of salted water to a boil and cook the (8 oz) pasta according to package instructions until al dente. Reserve (1/4 cup) of the pasta water before draining the pasta.

    In a large skillet over medium heat, add (2 tbsp) olive oil and (3 cloves) minced garlic. Sauté for about 1 minute until the garlic is fragrant.

    Add (6 oz) fresh spinach to the skillet and cook for 2-3 minutes, stirring frequently, until the spinach is wilted.

    Lower the heat and mix in (1/2 cup) ricotta cheese and (1/4 cup) grated Parmesan cheese, stirring until creamy and well combined.

    Season the mixture with (1/4 tsp) red pepper flakes, (1/2 tsp) salt, and (1/4 tsp) black pepper. Stir in the reserved pasta water to reach your desired sauce consistency.
