Quick and Easy Stuffed Zucchini Boats

- (4) medium zucchinis
- (2) chicken breast, cooked and shredded
- (1 cup) cooked quinoa
- (1 cup) black beans, rinsed and drained
- (1 cup) corn, canned or frozen
- (1 tsp) cumin
- (1 tsp) chili powder
- (1/2 tsp) red pepper flakes
- (1 cup) shredded cheese (cheddar or mozzarella)
- (4 tbsp) fresh cilantro, chopped
- (2 tbsp) olive oil
- (1/2 tsp) salt
- (1/2 tsp) black pepper

Preheat your oven to 375°F (190 °C).

Cut the (4) medium zucchinis in half lengthwise and scoop out the seeds using a spoon to create boats. Set aside.

In a mixing bowl, combine the (2) shredded chicken breast, (1 cup) cooked quinoa, (1 cup) black beans, (1 cup) corn, (1 tsp) cumin, (1 tsp) chili powder, (1/2 tsp) red pepper flakes, (1/2 tsp) salt, and (1/2 tsp) black pepper. Mix until well combined.

Drizzle the (2 tbsp) olive oil inside the zucchini boats and sprinkle with a pinch of salt and pepper.

Spoon the filling mixture evenly into the zucchini boats, packing them gently.

Top each filled zucchini boat with (1 cup) shredded cheese, distributing it evenly.

Place the stuffed zucchini boats on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly.
