Stuffed zucchini boats fresh from the oven

  • (4) medium zucchinis
  • (2) chicken breast, cooked and shredded
  • (1 cup) cooked quinoa
  • (1 cup) black beans, rinsed and drained
  • (1 cup) corn, canned or frozen
  • (1 tsp) cumin
  • (1 tsp) chili powder
  • (1/2 tsp) red pepper flakes
  • (1 cup) shredded cheese (cheddar or mozzarella)
  • (4 tbsp) fresh cilantro, chopped
  • (2 tbsp) olive oil
  • (1/2 tsp) salt
  • (1/2 tsp) black pepper

    Preheat your oven to 375°F (190 °C).

    Cut the (4) medium zucchinis in half lengthwise and scoop out the seeds using a spoon to create boats. Set aside.

    In a mixing bowl, combine the (2) shredded chicken breast, (1 cup) cooked quinoa, (1 cup) black beans, (1 cup) corn, (1 tsp) cumin, (1 tsp) chili powder, (1/2 tsp) red pepper flakes, (1/2 tsp) salt, and (1/2 tsp) black pepper. Mix until well combined.

    Drizzle the (2 tbsp) olive oil inside the zucchini boats and sprinkle with a pinch of salt and pepper.

    Spoon the filling mixture evenly into the zucchini boats, packing them gently.
