Quick and Easy Pesto Pasta with Cherry Tomatoes

Ingredients
Yields 4 servings
- (8 oz) spaghetti or pasta of your choice
- (1/2 cups) homemade or store-bought pesto
- (1 pint) cherry tomatoes, halved
- (2 tbsp) extra virgin olive oil
- (1/4 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) grated Parmesan cheese (optional)
- (1/4 cups) fresh basil leaves for garnish (optional)
Instructions

Bring a large pot of salted water to a boil and cook the (8 oz) spaghetti according to package instructions until al dente.

While the pasta is cooking, heat (2 tbsp) extra virgin olive oil in a large skillet over medium heat.

Add the (1 pint) cherry tomatoes to the skillet and sauté for about 5 minutes, or until they begin to soften. Stir occasionally.

Once the pasta is cooked, reserve (1/2 cup) of the pasta water and drain the rest.

Add the drained pasta to the skillet with the cherry tomatoes and (1/2 cup) pesto. Toss to combine, and add reserved pasta water as needed to reach desired consistency.

Season with (1/4 tsp) salt and (1/4 tsp) black pepper, mixing well to incorporate all flavors.

Serve warm, sprinkled with (1/4 cup) grated Parmesan cheese and garnished with (1/4 cup) fresh basil leaves if desired.
