Quick and Easy Chicken Piccata

Ingredients

- (2) chicken breasts, sliced thinly
- (1/2 cups) all-purpose flour
- (1/4 tsp) salt
- (1/4 tsp) black pepper
- (3 tbsp) olive oil
- (3 tbsp) unsalted butter
- (2 cloves) garlic, minced
- (1/2 cups) chicken broth
- (1/4 cups) fresh lemon juice
- (2 tbsp) capers, rinsed and drained
- (1/4 cups) fresh parsley, chopped for garnish

In a shallow dish, mix the (1/2 cup) all-purpose flour, (1/4 tsp) salt, and (1/4 tsp) black pepper together.

Dredge the (2) thinly sliced chicken breasts in the flour mixture, coating both sides evenly.

In a large skillet, heat (3 tbsp) olive oil over medium-high heat. Add the floured chicken breasts and cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, reduce the heat to medium and add (3 tbsp) unsalted butter. Once melted, add the (2 cloves) minced garlic and sauté for about 30 seconds until fragrant.

Pour in (1/2 cup) chicken broth and (1/4 cup) fresh lemon juice, scraping up any browned bits from the pan. Bring to a simmer.

Stir in (2 tbsp) capers and let the sauce cook for another 2 minutes, allowing it to reduce slightly.

Return the chicken to the skillet, spooning sauce over the top. Cook for another minute to heat through.

Garnish with (1/4 cup) chopped fresh parsley before serving.
