Quick and Easy Beef Tacos with Fresh Salsa

Ingredients

- (1 lb) ground beef
- (1) small onion, diced
- (2 cloves) garlic, minced
- (1 tbsp) taco seasoning
- (8) taco shells
- (1 cup) shredded lettuce
- (1 cup) diced tomatoes
- (1/2 cups) shredded cheese
- (1/4 cups) sour cream
- (1) lime, cut into wedges
- (1/4 tsp) salt
- (2 tbsp) olive oil
- (1) avocado, diced

In a large skillet, heat (2 tbsp) olive oil over medium heat.

Add the (1) small onion, diced, and cook until softened, about 3-4 minutes.

Stir in the (2 cloves) garlic, minced, and cook for an additional minute until fragrant.

Add the (1 lb) ground beef to the skillet. Break it into pieces with a spatula and cook until browned, about 5-6 minutes.

Sprinkle in the (1 tbsp) taco seasoning and (1/4 tsp) salt. Mix well and continue to cook for another 2-3 minutes until fully combined and cooked through.

While the beef is cooking, prepare the fresh salsa by combining (1) cup diced tomatoes and (1) diced avocado in a bowl. Squeeze juice from (1) lime over the mixture and stir gently to combine.

To assemble the tacos, fill each taco shell with the cooked beef mixture, followed by a handful of shredded lettuce, fresh salsa, and (1/2 cup) shredded cheese.
