Ingredients
Yields 4 servings
- (4) large flour tortillas
- (2 cups) shredded cheddar cheese
- (1 cup) cooked chicken, shredded
- (1/2 cups) bell peppers, diced
- (1/2 cups) onion, diced
- (1 tablespoon) olive oil
- (1 teaspoon) ground cumin
- (1 teaspoon) chili powder
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1/4 cups) fresh cilantro, chopped (optional)
- (1/2 cups) salsa (for serving)
- (1/2 cups) sour cream (for serving)
Instructions

In a skillet, heat 1 tablespoon of olive oil over medium heat.

Add 1/2 cup diced onion and 1/2 cup diced bell peppers to the skillet. Sauté for about 5 minutes until softened.

Stir in 1 teaspoon ground cumin, 1 teaspoon chili powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for another 2 minutes.

In a large bowl, combine the sautéed vegetables with 1 cup shredded chicken and 1 cup shredded cheddar cheese.

Place a tortilla in the skillet over medium heat. Spoon 1/4 of the chicken and cheese mixture onto half of the tortilla.

Fold the tortilla over to cover the filling. Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.

Repeat the process with the remaining tortillas and filling mixture.
