Pesto Chicken Sandwich with Spinach and Tomato

Ingredients
Yields 4 servings
- (2) boneless, skinless chicken breasts
- (1/4 cups) pesto sauce
- (4 slices) of whole grain bread
- (2 cups) fresh spinach
- (1) large tomato, sliced
- (1/2 cups) mozzarella cheese, shredded
- (2 tbsp) olive oil
- (1/4 tsp) black pepper

Marinate the (2) boneless, skinless chicken breasts in (1/4 cup) pesto sauce for at least 30 minutes.

Preheat a grill or grill pan over medium heat and brush with (1 tbsp) olive oil.

Grill the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove and let rest for 5 minutes.

Meanwhile, in a separate pan, toast the (4) slices of whole grain bread in (1 tbsp) olive oil until golden brown on both sides.

Slice the grilled chicken into strips.

On two slices of toasted bread, layer the (2 cups) fresh spinach, grilled chicken strips, (1) sliced tomato, and (1/2 cup) shredded mozzarella cheese.

Top with the remaining two slices of toasted bread to form sandwiches. Press down gently.
