Ingredients
Yields 4 servings
- (4 cups) sliced fresh peaches
- (1 cup) granulated sugar
- (1 tablespoon) lemon juice
- (1 teaspoon) ground cinnamon
- (1/2 teaspoons) salt
- (1 cup) all-purpose flour
- (1 tablespoon) baking powder
- (1/4 cups) unsalted butter, melted
- (1/2 cups) milk
- (1 teaspoon) vanilla extract
- (1/2 cups) brown sugar
Instructions
- 1
Preheat the oven to 350°F (175 °C).
- 2
In a large bowl, combine 4 cups sliced fresh peaches, 1 cup granulated sugar, 1 tablespoon lemon juice, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt. Toss to coat the peaches evenly and set aside to marinate for 10 minutes.
- 3
In another bowl, whisk together 1 cup all-purpose flour, 1 tablespoon baking powder, and 1/4 teaspoon salt.
- 4
Add 1/4 cup melted unsalted butter, 1/2 cup milk, and 1 teaspoon vanilla extract to the flour mixture. Stir until just combined; do not overmix.
- 5
Pour the peach mixture into a greased 9x9-inch baking dish, spreading it evenly.
- 6
Drop spoonfuls of the batter over the peaches, covering them as much as possible. Sprinkle 1/2 cup brown sugar evenly over the top of the batter.
- 7
Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the batter comes out clean.
- 8
Let cool for a few minutes before serving.
