One-Pot Spicy Sausage and Pepper Rice in a bowl

  • (1 lb) spicy Italian sausage, sliced
  • (1) bell pepper, sliced (red, yellow, or green)
  • (1) medium onion, diced
  • (2 cloves) garlic, minced
  • (1 cup) long-grain rice
  • (2 cups) chicken broth
  • (1/2 tsp) red pepper flakes
  • (1 tsp) Italian seasoning
  • (2 tbsp) olive oil
  • (1/4 tsp) salt
  • (1/4 tsp) black pepper
  • (1/4 cups) fresh parsley, chopped (for garnish)

Instructions

    In a large pot, heat (2 tbsp) olive oil over medium heat. Add the (1 lb) spicy Italian sausage and cook until browned, about 5-7 minutes.

    Add the (1) sliced bell pepper and (1) diced onion to the pot. Sauté for about 5 minutes until the vegetables are softened.

    Stir in (2 cloves) minced garlic and cook for an additional minute until fragrant.

    Add (1 cup) long-grain rice, (2 cups) chicken broth, (1/2 tsp) red pepper flakes, (1 tsp) Italian seasoning, (1/4 tsp) salt, and (1/4 tsp) black pepper to the pot. Stir well to combine all ingredients.

    Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.
