One-Pot Spicy Sausage and Pepper Rice

Ingredients

- (1 lb) spicy Italian sausage, sliced
- (1) bell pepper, sliced (red, yellow, or green)
- (1) medium onion, diced
- (2 cloves) garlic, minced
- (1 cup) long-grain rice
- (2 cups) chicken broth
- (1/2 tsp) red pepper flakes
- (1 tsp) Italian seasoning
- (2 tbsp) olive oil
- (1/4 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) fresh parsley, chopped (for garnish)

In a large pot, heat (2 tbsp) olive oil over medium heat. Add the (1 lb) spicy Italian sausage and cook until browned, about 5-7 minutes.

Add the (1) sliced bell pepper and (1) diced onion to the pot. Sauté for about 5 minutes until the vegetables are softened.

Stir in (2 cloves) minced garlic and cook for an additional minute until fragrant.

Add (1 cup) long-grain rice, (2 cups) chicken broth, (1/2 tsp) red pepper flakes, (1 tsp) Italian seasoning, (1/4 tsp) salt, and (1/4 tsp) black pepper to the pot. Stir well to combine all ingredients.

Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.

Once cooked, fluff the rice with a fork and garnish with (1/4 cup) chopped fresh parsley before serving.
