One-Pan Spicy Garlic Shrimp with Rice

Ingredients
Yields 4 servings
- (1 lb) large shrimp, peeled and deveined
- (1 cup) jasmine rice
- (2 cups) chicken broth
- (4 cloves) garlic, minced
- (1) medium onion, chopped
- (1) red bell pepper, diced
- (1/4 cups) soy sauce
- (1/4 tsp) red pepper flakes
- (1/2 tsp) black pepper
- (2 tbsp) olive oil
- (1/4 cups) green onions, chopped
- (1) lime, cut into wedges

In a large skillet, heat (2 tbsp) olive oil over medium heat. Add the (1) medium onion and sauté for about 3 minutes until translucent.

Add the (4 cloves) minced garlic and (1) diced red bell pepper to the skillet. Cook for an additional 2 minutes until fragrant.

Stir in the (1 lb) shrimp, (1/4 tsp) red pepper flakes, and (1/2 tsp) black pepper. Cook until the shrimp turns pink, about 3-4 minutes. Remove the shrimp mixture from the skillet and set it aside.

In the same skillet, add the (1 cup) jasmine rice and toast it for 2 minutes. Then, pour in the (2 cups) chicken broth and (1/4 cup) soy sauce. Bring it to a boil.

Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.

Stir the shrimp mixture back into the skillet with the rice, cooking for an additional 2 minutes to heat through.

Remove from heat and sprinkle with (1/4 cup) chopped green onions before serving. Serve with lime wedges on the side.
