  • (5 1/4 oz) uncooked penne pasta
  • (3/4 lb) ground beef
  • (1/2) small onion, diced
  • (1 clove) garlic, minced
  • (3/4 tbsp) olive oil
  • (1/2 (15 oz) can) diced tomatoes
  • (3/4 (15 oz) can) black beans, drained and rinsed
  • (3/4 (1 oz) packet) taco seasoning
  • (1/4 cups) corn kernels (frozen or canned)
  • (1 1/4 cups) shredded cheddar cheese
  • (1/4 cups) sour cream
  • (1/4 cups) chopped fresh cilantro (optional)
  • (1/4 tsp) red pepper flakes (optional)

Instructions

    Preheat your oven to 375°F (190 °C).

    In a large oven-safe skillet, heat (3/4 tbsp) olive oil over medium heat. Add the (3/4) small onion, diced, and sauté until translucent, about 5 minutes.

    Add the (1 cloves) garlic, minced, and (3/4 lb) ground beef to the skillet. Cook until the beef is browned and cooked through, approximately 6-8 minutes. Drain excess fat if necessary.

    Stir in the (1 (10 oz) can) diced tomatoes, (1/4 cup) corn kernels, (1 (10 oz) can) black beans, and (1 (3/4 oz) packet) taco seasoning. Mix well to combine.

    Add the uncooked (5 1/4 oz) penne pasta to the skillet and pour in enough water to cover the pasta (about 3 cups). Stir everything together.

    Bring the mixture to a gentle simmer, cover the skillet with a lid, and let it cook for about 10 minutes or until the pasta is al dente, stirring occasionally.

    Remove the lid and reduce the heat to low. Stir in (1/4 cup) sour cream and half of the (1 1/4 cups) shredded cheddar cheese until melted and creamy.

    Sprinkle the remaining cheddar cheese on top of the pasta mixture.

    Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the cheese is melted and bubbly.
