Ingredients

- (1 cup) quinoa
- (2 cups) water
- (1/2 cups) almond milk
- (1/4 cups) chopped walnuts
- (1/4 cups) dried cranberries
- (2 tbsp) honey
- (1 tsp) ground cinnamon
- (1/4 tsp) salt
- (1) banana, sliced
- (1/4 cups) fresh berries (strawberries or blueberries)
Instructions

In a medium pot, combine (1) cup quinoa and (2) cups water. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed.

Remove the pot from the heat and let it sit covered for an additional 5 minutes.

Fluff the quinoa with a fork and stir in (1 /2) cup almond milk, (2) tbsp honey, (1) tsp ground cinnamon, and (1 /4) tsp salt until well combined.

In a serving bowl, add a generous portion of the quinoa mixture. Top with (1 /4) cup chopped walnuts, (1 /4) cup dried cranberries, and slices of (1) banana.
