Nutty Banana Protein Pancakes

Ingredients
Yields 8 pancakes
- (1) ripe banana
- (1 cup) rolled oats
- (2 eggs)
- (1/2 cups) milk
- (1/2 tsp) baking powder
- (1/4 tsp) salt
- (1/2 tsp) vanilla extract
- (1/4 cups) chopped walnuts
- (1/4 cups) protein powder
- (2 tbsp) honey

In a bowl, mash the (1) ripe banana until smooth.

Add the (2) eggs to the mashed banana and whisk until well combined.

Stir in the (1/2 cup) milk and (1/2 tsp) vanilla extract to the egg and banana mixture.

In a separate bowl, mix together the (1 cup) rolled oats, (1/4 cup) protein powder, (1/2 tsp) baking powder, and (1/4 tsp) salt.

Combine the wet ingredients with the dry ingredients until just mixed; avoid overmixing.

Fold in the (1/4 cup) chopped walnuts into the batter.

Heat a non-stick skillet over medium heat and lightly grease it if necessary.

Pour (1/4 cup) of the pancake batter onto the skillet and cook for about 2-3 minutes until bubbles form on the surface.

Flip the pancake and cook for another 2-3 minutes until golden brown. Repeat with the remaining batter.
