  • (2 cans) (5 oz each) tuna in water, drained
  • (1) medium cucumber, diced
  • (1 cup) cherry tomatoes, halved
  • (1/2) red onion, finely chopped
  • (1/4 cups) Kalamata olives, sliced
  • (1/4 cups) feta cheese, crumbled
  • (1/4 cups) fresh parsley, chopped
  • (2 tbsp) olive oil
  • (2 tbsp) lemon juice
  • (1/2 tsp) garlic powder
  • (1/2 tsp) dried oregano
  • (8) large whole wheat tortillas
  • (1 cup) mixed greens, for serving (optional)

Instructions

    In a large mixing bowl, combine the (2) cans of tuna, (1) medium cucumber, (1) cup cherry tomatoes, (1 /2) red onion, (1 /4) cup Kalamata olives, (1 /4) cup feta cheese, and (1 /4) cup fresh parsley.

    In a small bowl, whisk together (2 tbsp) olive oil, (2 tbsp) lemon juice, (1/2 tsp) garlic powder, and (1/2 tsp) dried oregano to create the dressing.

    Pour the dressing over the tuna mixture and stir gently until everything is well combined. Season with salt and pepper to taste.

    Lay out the (8) large whole wheat tortillas on a clean surface. Divide the tuna salad mixture evenly among the tortillas, placing it in the center of each one.

    Top the tuna salad with (1 cup) mixed greens if using, then fold in the sides of the tortilla and roll it up tightly from the bottom to the top to create a wrap.
