Mediterranean Chickpea Wrap with Tzatziki Sauce

Ingredients

- (1 can) (15 oz) chickpeas, drained and rinsed
- (1) medium cucumber, diced
- (1) medium tomato, diced
- (1/2) red onion, finely chopped
- (1/2 cups) plain Greek yogurt
- (1/4 cups) fresh dill, chopped
- (1 clove) garlic, minced
- (1 tablespoon) lemon juice
- (1 teaspoon) olive oil
- (1 teaspoon) ground cumin
- (1 teaspoon) paprika
- (4) large whole wheat tortillas
- Salt to taste
- Pepper to taste

In a bowl, combine 1 can (15 oz) chickpeas, 1 teaspoon ground cumin, 1 teaspoon paprika, and salt and pepper to taste. Mash slightly with a fork to combine.

Heat 1 teaspoon olive oil in a skillet over medium heat. Add the chickpea mixture and cook for 5-7 minutes, stirring occasionally, until heated through.

In a separate bowl, mix 1/2 cup plain Greek yogurt, 1/4 cup fresh dill, 1 clove garlic (minced), and 1 tablespoon lemon juice to make the tzatziki sauce. Season with salt to taste.

Warm 4 large whole wheat tortillas in a dry skillet for about 30 seconds on each side until pliable.

To assemble the wraps, spread a generous amount of tzatziki sauce on each tortilla. Top with the chickpea mixture, 1 medium cucumber (diced), 1 medium tomato (diced), and 1/2 red onion (finely chopped).

Roll up each tortilla tightly, tucking in the sides as you go, to form a wrap.
