Ingredients
Yields 4 servings
- (2) boneless, skinless chicken breasts
- (2 tbsp) olive oil
- (1 tbsp) lemon juice
- (1 tsp) dried oregano
- (1 tsp) garlic powder
- (1 tsp) paprika
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (4) whole wheat pita breads
- (1) cucumber, diced
- (1) tomato, diced
- (1/2) red onion, thinly sliced
- (1/2 cups) plain Greek yogurt
- (1 tbsp) fresh dill, chopped
- (1/2 tbsp) honey
Instructions
- 1
In a bowl, combine (2 tbsp) olive oil, (1 tbsp) lemon juice, (1 tsp) oregano, (1 tsp) garlic powder, (1 tsp) paprika, (1/2 tsp) salt, and (1/4 tsp) black pepper to create a marinade.
- 2
Cut the (2) boneless, skinless chicken breasts into strips and add them to the marinade. Stir to coat the chicken evenly and let it marinate in the refrigerator for at least 30 minutes.
- 3
While the chicken is marinating, prepare the yogurt sauce by mixing (1/2 cup) Greek yogurt, (1 tbsp) fresh dill, and (1/2 tbsp) honey in a small bowl. Set aside.
- 4
After marinating, heat a large skillet over medium-high heat. Add the marinated chicken strips and cook for about 6-8 minutes, or until fully cooked and browned, stirring occasionally.
- 5
While the chicken cooks, warm the (4) whole wheat pita breads in a separate pan or in the oven for a few minutes until soft.
- 6
Once the chicken is done, remove it from the heat. To assemble, take a warm pita bread, add a few chicken strips, and top with (1) diced cucumber, (1) diced tomato, and (1 /2) thinly sliced red onion.
- 7
Drizzle the yogurt sauce over the top and fold the pita in half to hold the filling. Repeat with the remaining pitas and ingredients.
