Spring Fruit and Yogurt Parfaits in jars

Ingredients

Servings4

Yields 4 servings

  • (2 cups) plain Greek yogurt
  • (1/4 cups) honey
  • (2 cups) mixed fresh fruits (such as strawberries, blueberries, and kiwi)
  • (1 cup) granola
  • (1 teaspoon) vanilla extract
  • (1 tablespoon) lemon juice
  • (1/4 teaspoons) cinnamon

Instructions

  1. 1

In a mixing bowl, combine 2 cups plain Greek yogurt, 1/4 cup honey, 1 teaspoon vanilla extract, and 1/4 teaspoon cinnamon. Stir until well mixed.

  2. 2

Wash and chop the mixed fresh fruits (2 cups) into bite-sized pieces. In a separate bowl, toss the fruits with 1 tablespoon lemon juice to prevent browning.

  3. 3

In four 8-ounce jars or cups, start layering the parfaits. Begin with a layer of the yogurt mixture (about 1/4 cup).

  4. 4

Add a layer of mixed fruits (about 1/4 cup) on top of the yogurt layer.

  5. 5

Sprinkle a layer of granola (about 2 tablespoons) on top of the fruits.

  6. 6

Repeat the layers (yogurt, fruits, granola) until the jars are filled, finishing with a layer of fruits and a sprinkle of granola on top.

  7. 7

Cover the jars with lids or plastic wrap and refrigerate for at least 1 hour or up to 2 hours before serving to allow the flavors to meld.
